Iris's Chicken Vegetable Soup

The richest and most flavorful soup ever!

 Iris’s Tip 
 Ingredients 

2 chicken leg quarters

1 chopped onion

3 thinly sliced celery stalks

3 zucchini

2 sweet potatoes

4 carrots

1/2 butternut squash

1/2 cup of chopped dill

3 tablespoons oil

12 cups of water

Season to taste with salt, black pepper, white pepper, a tablespoon of chicken soup seasoning mix and a pinch of turmeric

 Directions 

1, Chop the onion; cut the sweet potato, zucchini, butternut squash, and carrots into cubes.

2. Saute the onion, the celery and chicken in a pot with a lid on for about 10 minutes, stirring every 2 minutes.

3. Add the rest of the vegetables; continue to saute with the lid on for another 10 minutes, stirring every few minutes.

4. Add the water; when the water comes to a boil, add the seasoning and chopped dill. 

5. Cook for about two hours on medium heat.

6. Before serving, take out the chicken and chop into small cubes.

7. Return the cubed chicken into the pot, and serve hot.
