Spelt Flour Rolls

Lately, we have allowed ourselves to consume too many wheat products! Let me suggest you try baking with spelt flour. (If you haven't already.) Spelt is a healthier grain. Even before the Middle Ages, spelt was the main grain for human consumption, until it gave way to wheat grain which was cheaper and easier to grow. Spelt grain is richer in protein, dietary fiber, vitamins, and minerals and is reduced by allergens and gluten from wheat. Many researchers have found that spelt contributes to reducing the level of cholesterol and insulin in the body. It helps with the digestive process, strengthens bone tissue, and helps the immune system and blood flow. Spelt flour is similar in its properties to wheat flour. It is, therefore, possible to convert any favorite recipe made with wheat flour to spelt flour. And if that is not enough, spelt has a wonderful nutty flavor and soft texture. I am delighted to share this spelt rolls winning recipe with you.

For vegan rolls, brush with maple syrup mixed with water.

 Ingredients 

Ingredients for 10 rolls:

7 cups of spelt flour (white or whole wheat)

2 1/2 cups warm water

2 tablespoons dry yeast

3 tablespoons sugar/honey/date syrup 

1 tablespoon salt

1/4 cup oil

Brush on egg wash or, if you want to keep it vegan, a tablespoon of maple syrup and a tablespoon of water; sprinkle with some sesame or poppy seeds

 Directions 

1. In the mixer bowl, with a dough hook, place the flour, sugar and yeast; mix for a minute.

2. Add the salt, oil and water; mix slowly for about 10 minutes, until a uniform dough is formed.

3. Cover with plastic wrap; proof in a warm place for about an hour.

4. Lightly dust your work surface; with a spatula, remove the dough from the bowl onto the floured surface.

5. Divide the dough into 10 equal pieces. Roll each piece into a rectangle, and then roll into a strand. Knot each strand and transfer onto a lined baking sheet.

6. Cover with a light kitchen towel or plastic wrap; proof in a warm place for about half an hour.

7. Brush with egg wash/maple syrup; sprinkle with sesame or poppy seeds, and bake in a preheated 350 degrees Fahrenheit or 180 degrees Celsius oven for 20-30 minutes, until the rolls are golden brown.
