The Best Salmon Skewers

Bite-size salmon wrapped with shredded phyllo pastry and baked for a delicious crunchy bite served with a mild chili dipping sauce. This delicious, and impressive salmon skewer will definitely be a favorite and a show-stopper appetizer at your dinner or appetizer party.

Ingredients
Ingredients for the salmon:
1 package of Kataifi shredded phyllo pastry, thawed
1 LB salmon fillet cut to (1x1 inch/ 2x2 cm) bite-size cubes
Season with Old Bay seasoning, salt, freshly ground black pepper
(Make your own Old Bay seasoning: ginger, garlic powder, ground chili flakes, black pepper, salt, and paprika)
Olive oil cooking spray
6 inch/15 cm wooden skewers
Ingredients for the chili marinade and dipping sauce:
1/2 cup of sweet and chili sauce
2/3 cup of mayonnaise
1/4 cup of Sriracha hot sauce
Juice from 1/2 lime
2 tablespoons of honey
2 tablespoons of rice vinegar
1tablespoon of brown sugar
Salt
Black pepper
Directions
Mix all of the marinade and dipping sauce ingredients, and set aside.
Cut the salmon to 1x1 inch/ 2x2 cm bite-size cubes, and place them in a dish.
Scoop about 1/3to 1/2 a cup of the sauce and pour over the salmon, massage the salmon with the sauce, cover with plastic wrap, and refrigerate for half an hour.
Open the thawed shredded phyllo pastry package, place in a dish, and cover with a damp cloth.
Place a skewer in each of the salmon pieces.
Lay a handful of the shredded phyllo pastry threads on your work surface, and wrap the salmon in it.
Place the wrapped salmon skewers on a baking sheet lined with parchment paper.
Spray with olive oil cooking spray and bake at a 400 degrees Fahrenheit /200 degrees celsius oven for 15-20 minutes or until golden brown.
Serve hot with the chili dipping sauce.
